Noodles complimented with some good self made vegetable soup and apples


When it comes to food, I am a die hard fan of noodles. It may be in a variety of form but so long there is noodle and even if I am able to see traces of noodles I will love the dish. So friends out there, if you ever plan to invite me over to your place for a meal, you need not worry about what you will have to cook. Any dish where noodle is there will be loved by me. So the above dish which I made was a simple noodle complimented with self made vegetable soup and a little bit of apples in the side. I remember having made this dish on a cold week day afternoon. It took me less than 30 minutes to make this dish. The main time was consumed in chopping the vegetables. ^__^….
So below is the ingredient and the procedure to make the dish.

Ingredients:
  •         Noodles, which is easily available in the market. Sometimes you can go about making noodles with ata too. This will be a good option for those taking care of health.
  •    Vegetables which you can get in the market – I got carrot, baby corn, cabbage, lettuce, mushrooms.
  •       Garlic – 3 cloves
  •            Ginger – 1 small piece
  •            Corn flour. – ½ of a small tablespoon
  •            Pepper. – ¼ of a small tablespoon
  •            Olive Oil – 2 big table spoon
  •            Tomato – 1 no.
  •           Onion – 1 no.
  •           Green Chilly – 1 no. (optional)
  •           Soya sauce – 1 small table spoon.
Procedure:
The first and foremost process being boiling the noodles separately in hot water. You can take the content for 1-2 people. Do not put the uncooked noodle in a large amount because noodles often tend to expand after being cooked. Stir the noodles well and make sure they are not over cooked. After the noodles are ready, pour out the hot water and put the noodles in cold water for a while. Then add a little of olive oil to the noodles and stir it well with your hands or chopsticks or other stirrer and leave it covered for a while. This process will prevent the noodles from sticking to each other. So the noodle is ready.

The next step being the soup. A container which is suitable for making soup be taken. Before starting with the cooking, chop the vegetables – lettuce, baby corn, cabbage, carrot, mushroom (if available), onion, tomato, chilly (optional) ready. Make a paste of ginger and garlic and keep it aside. Put the heat on and place the container. Add 2 big table spoon of olive oil and fry the onion, tomato and chilly in it. Add the paste of garlic and ginger and cook in a medium heat until the onion turns light brown. Then add the vegetables in it, pinch of salt, some pepper and a little of chili powder and cook for approximately 3-4 minutes. Add 1 small table spoon of soya sauce and again fry for another 2 minutes. Now add water (just enough to cover the vegetables) and let it boil until the ingredients are cooked well. If the water dries up before the vegetables are cooked then add some more water to cook it well. Once the vegetables are cooked, now add enough water as per your requirement for making the soup. Make sure to add cold water and not hot water because we have to add corn flour and it is always preferable to add the corn flour in cold water. Add ½ small table spoon of corn flour and keep stirring the content until the flour is totally dissolved in the water. Adding the corn flour gives thickness content to the soup. Taste accordingly for salt and other contents. Let it boil for a while usually 5 minutes to get adequate thickness for the soup. Just before serving you can top up the soup with a small piece of Amul Butter.

Usually people cook the noodle in the soup itself but I will refrain myself from doing that as it will just add to making the soup too thick which will dry off after a while. So once the soup is ready I pour it out in a bowl and then add the noodles which were prepared before. For topping I used finely chopped carrots which also happens to be my favorite. Along with it to give a little different taste I place a small bowl of cut apples to eat along with the noodles. Serving it with chop sticks and placing it in between your lips, slurping up the noodles through the lips, in between the teeth, tongue making its taste and the nose making its own noise with water caused by the heat of the chilly/ the pepper running through the nostrils 😅😅will be really an amazing experience.
